Sagrantino di Montefalco dry - D.O.C.G.
This is a well-structured wine obtained exclusively from the Sagrantino
vine. Thanks to its very high polifenol and tannin content, it is
extraordinarily long-lived. For this reason it requires a long
refining period, first in wood, then in the bottle. Thus Montefalco
Sagrantino dry is right with many kinds of meat, from beef and pork to
kid and lamb, and also sets off local game-based dishes like thrush and
migratory wood pigeon. This cuisine of poor but rich traditions also
boasts a great "jewel": the black truffle . This truffle matures from
November to March, and the French consider it so excellent as to import
it when their production is insufficient. Unlike the white truffle,
the black truffle is consumed cooked, and the Montefalco Sagrantino is
ideal in exalting its delicate odour and savouriness. Serving
